Ingredients
4 6-ounce boneless, skinless chicken breasts
4 tbsp. pesto
4 tbsp. goat cheese
1 1/2 tbsp. olive oil, divided
Kosher salt and pepper
4 to 6 thin slices prosciutto
1/4 c. small basil leaves
12 oz. green beans, trimmed
2 large cloves garlic, thinly sliced
Tomato salad, for serving
Directions
Step 1
Insert knife into thickest part of each chicken breast and move back and forth to create 2½-inch pocket that is as wide as possible without going through.
Step 2
Using spoon, divide pesto and goat cheese among pockets, rub with ½ tablespoon oil, then season with salt and pepper.
Step 3
Lay prosciutto slices on cutting board and place a few small basil leaves in center of each. Place chicken on top and wrap prosciutto around chicken, then place seam side down in air fryer basket. Air-fry at 375°F 6 minutes.
Step 4
Toss green beans and garlic with remaining Tbsp oil and ¼ teaspoon each salt and pepper. Move chicken to one side of air fryer and place green beans on other side. Continue air-frying until chicken is cooked through and green beans are just tender and slightly charred. Serve with tomato salad if desired.
